Italian chicken from the oven with olive oil is a heartwarming dish that brings together comfort food and Mediterranean flair. Juicy chicken thighs are marinated in lemon, garlic, herbs and a generous amount of L'Oro Verde di Puglia olive oil, and then slowly roasted until the flavours are fully absorbed into the meat.
What makes this dish special is the simplicity of the marinade and how the olive oil gives a shiny, slightly crispy crust to the chicken. Italian chicken from the oven with olive oil is perfect for a weekday meal, but also festive enough for a dinner with friends. Serve with potatoes, focaccia or grilled vegetables for a complete meal.
Ingredients (for 2 persons)
- 4 chicken thighs with skin
- 3 tablespoons L'Oro Verde di Puglia olive oil
- 1 lemon (juice and rind)
- 2 cloves of garlic, finely chopped
- 1 sprig of rosemary, finely chopped
- Sea salt and black pepper
Preparation
- Put the chicken in a bowl and add olive oil, lemon juice, lemon zest, garlic, rosemary, salt and pepper.
